    Acorn squash can be prepared a number of ways; I think soup is the most popular. My favorite way is to slice the squash in half so you split the stem (don't slice along the equator). Then microwave each half in about a 1/2 inch of water face down for about 5-6 min to soften it. Toss some butter, brown sugar and fresh ground pepper into each half, wrap them individually in tin foil, and bake them for about 45-60 min at 350 degrees. Boom. You've got yourself a great side dish to go along with just about anything, including tacos. Well, maybe not.

    Anyway, I'm not making acorn squash tonight. I think I'll try spaghetti squash for the first time instead.
